I love cooking with my slowcooker because it’s healthy and convenient. If you’ve never cooked with a crockpot before, it can be a bit intimidating at first, especially if you don’t know what type of recipes to try. I want you to have a lot of success right from the start so that you’ll continue to use your slowcooker.
Here are some of my favorite easy crockpot meals for you to try. They don’t have a lot o ingredients, come together quickly and always turn out super tasty. Give them a try.
Easy Crockpot Meatloaf Recipe
- 2 pounds of lean hamburger
- 2 eggs
- 2 slices bread, in small cubes
- Milk
- Ketchup
- Salt and pepper
- 1 small onion, chopped
Crack the eggs into a large bowl and beat them with a fork. Add your bread crumbs. You can also use a sleeve of crushed crackers instead of the bread if you prefer. I like the bread because it adds less sodium and it’s an easy way to use up stale bread. Add just enough milk to moisten the bread. A splash is usually all that’s needed.
Add the meat, chopped onion, and salt and pepper to taste. Mix it all together with your hands and put it in the crockpot. I pat it down a bit so it molds itself to the shape of the crockpot. Pour enough ketchup on top to cover your meatloaf. Cook on low for 8 -9 hours.
Quick Tip – Peel a few potatoes, cut them into wedges and stick them in your meatloaf (around the outside) and allow them to cook along with the meat. Another option is to make some instant mashed potatoes when your meatloaf is done. Just add a veggie or salad and you have a complete meal.
Crockpot Chicken Corn Chowder
- 1/2 cup chopped carrots
- 1 cup skim milk
- 1 cup low sodium chicken broth
- 1/8 tsp. white pepper
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 potato, peeled and cubed
- 1/2 lb. boneless, skinless chicken breasts, cut into 1″ pieces
- 2 (15 oz.) cans creamed corn
- 1/4 cup dried potato flakes
Pour everything except the potato flakes in your crockpot. Cook on low for 5 to 6 hours. Check your potatoes and make sure they are tender. The chicken should also be cooked all the way through.
Turn your crockpot to high and add the potato flakes. Stir them in well (you don’t want clumps) and cook uncovered for a few minutes. Serve with a chunk of hardy bread or a side salad.
